Veg Inspiration

Some veg blogs I found recently while searching recipes. (Too bad I have zero decent food/ recipe ingredients in my house to make anything worth eating.) This may sound weird coming from an Italian, but I'm so bored of pasta, at lest of the way my dad keeps making it. It's just a trite dinner dish at my home right now; the pasta and the red sauce.. repeat.. ugh.
So while looking for some fresh new recipes I stumbled across these bloggers that are very inventive and experimental in their food choices.

Wallaby

Now, I don't know about you, but a pretty sizeable part of my day is spent thinking about food. I'm not some sort of crazy food addict or anything, but i certainly do appreciate a nice hearty meal, or just a good snack, for that matter. 
Furthermore, since traveling to Paris, France a few years back, I have been searching high and low for the perfect yogurt. You see, in France, they have yummy flavors like apple, and pear, pre-mixed for you (non of this fruit on the bottom nonsense), and, frankly, it's one of the most delicious things ever.
So I have finally found the perfect yogurt. It's called Wallaby, and costs the standard 99 cents at the grocer's. Not only that, but Wallaby comes in some of the most exciting and delicious flavors I've ever seen. Some of my favorites are Lemon, Key Lime, and Peach. But true to yogurt form, they also have the standard blueberry, raspberry, strawberry and vanilla. The citrus-ey flavors aren't too tart, but just the right flavor, and the standard yogurt taste, ya know the one i mean?, is muted in Wallaby, so that it doesn't taste like you're eating sour milk.
Plus, who doesn't enjoy a nice Kangaroo graphic on their breakfast? Enjoy!

Quiche Me


I found these beautiful little mini quiches (crust less, I know) on Bread and Honey and I really want to make them right now, but sadly I have no spinach nor cool blue homegrown eggs. Basically, I just wanted to share idea because I think it's one of the better recipes from B&H since one of their contributors (the baker, damn) left the blog. I believe I have written about this before so I won't go on about her new blog.


Also, I found this really sick octopus chandelier whilst browsing through The Cobrasnake's pictures the other day. It's pretty much the coolest light fixture I have ever seen.

Yummy food

Mozzarella-Stuffed Arancini

Ingredient List

Serves 8

  • 1 1/2 cups instant brown rice
  • 4 green onions, divided
  • 2 cloves garlic, minced (about 2 tsp.)
  • 2 large eggs, lightly beaten
  • 1/2 cup chopped fresh parsley, plus more for garnish
  • 1/3 cup grated Romano cheese
  • 2 cups whole-grain breadcrumbs
  • 16 marinated fresh mozzarella balls, drained, oil reserved (1 12-oz. container)
  • 1 28-oz. jar marinara sauce

Directions

  1. Combine rice, 1 whole green onion, garlic and 3 1/2 cups water in saucepan. Bring to a boil, cover, reduce heat to medium low, and simmer 15 to 20 minutes, or until all liquid has been absorbed and rice is soft and slightly sticky. Remove from heat, transfer to bowl, and cool. Remove green onion, and discard.
  2. Preheat oven to 425F. Line baking sheet with parchment paper, or coat with cooking spray. Chop remaining green onions finely. Fold eggs, parsley, cheese and onions into rice. Spread breadcrumbs on large plate.
  3. Place 1/4 cup rice mixture in palm of hand. Shape into tangerine-sized ball around one mozzarella ball. Roll in breadcrumbs, and place on prepared baking sheet. Repeat with remaining rice, mozzarella and breadcrumbs. Drizzle arancini with reserved oil, and bake 20 to 25 minutes, or until outsides are crisp and browned.
  4. Warm marinara sauce, and ladle into bottom of large serving dish. Place arancini on top of sauce, and sprinkle with parsley. Serve immediately.
I would probably serve this with salad and some rustic Italian bread. Or if you're a carnivore, well, I don't have any ideas for you. Sorry.
